Sour Cream Banana Bread

 
  • 1/2 cup butter (1 stick)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mashed bananas (about 3)
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup sour cream
Cream the butter with the sugar.  Add the eggs and vanilla.  Add the dry ingredients; mix.  Add the mashed bananas, nuts and sour cream.  Bake in a greased loaf pan at 350 degrees for 1 hour.

**This works well in a bread machine also and cooks up better (no gooey middle). Just load ingredients in recommended order as your machine (usually liquid first).  Enjoy!

Best Ever Banana Bread

  • 3/4 cup butter
  • 2 1/4 cup sugar
  • 3 eggs, beaten
  • 2 tsp vanilla
  • 1/3 cup sour cream
  • 2 tsp lemon juice
  • 5 very ripe bananas
  • 3 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
Preheat oven to 350 degrees.  Cream buter and sugar.  Beat in eggs, add vanilla, sour cream, lemon juice and bananas.  Add flour, baking power and baking soda.  Pour batter in 2 greased loaf pans.  Bake 30-40 mins.  **This recipe works very well in bread machines.  Just add ingredients in order recommended by your machine manufacturer-usually liquid ingredients first.**

Honey Oatmeal Bread

  • 1 1/4 cup water (70-80 degrees)
  • 1/2 cup honey
  • 2 tbsp vegetable oil
  • 1 cup quick-cooking oats
  • 1 1/2 tsp salt
  • 3 cups plus 2 tbsp bread flour
  • 2 1/4 tsp active dry yeast
In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 mins; add 1-2 tbsp of water or flour if needed) Yield 1 loaf (1.5 lb)


**Add dried cranberries or raisins for a change**

Zucchini Raisin Bread

  • 3/4 cup plus 2 tbsp water (70-80 degrees)
  • 2 tbsp butter/margarine, softened
  • 1 cup shredded zucchini
  • 2 tbsp sugar
  • 4 1/2 tsp nonfat dry milk powder
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 3 1/2 cups bread flour
  • 2 1/2 tsp active dry yeast
  • 1/2 cup raisins 
In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check doug after 5 mins of mixing; add 1-2 tbsp of water or flour if needed). Just before the final kneading (machine may audibly signal this), add the raisins. yield - 1 loaf (1.5 lbs)

Multigrain Bread

  • 1 cup water (70-80 degrees)
  • 2 tbsp vegetable oil
  • 2 egg yolks
  • 1/4 cup molasses
  • 1 tsp salt
  • 1 1/2 cup bread flour
  • 1 cup whole wheat flour
  • 1/2 cup rye flour
  • 1/2 cup nonfat dry milk  powder
  • 1/4 cup quick-cooking oats
  • 1/4 cup wheat germ
  • 1/4 cup cornmeal
  • 2 1/4 tsp active dry yeast
In bread machine pan, place all ingredients in order suggested by manufacturer (usually liquid ingredients frist).  Select basic bread setting.  Choose crust color and loaf size (2 lb), if available.  Bake according to bread machine directions (check dough after 5 mins of mixing; add 1 to 2 tbsp water or flour if needed).  **Dough ball should be moving along the sides of the pan, but not stuck on the mixing arm**

Banana-Nut Chip Bread

1 1/2 cup mashed ripe bananas (about 3 medium)
1 1/4 cup sugar
3 eggs
1/3 cup vegetable oil
1 tbsp vanilla extract
3/4 cup quick-cooking oats
2 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/4 tsp ground nutmeg
1 cup (6 oz) semisweet chocolate chips
3/4 cup chopped walnuts/pecans

In a mixing bowl, beat bananas, sugar, eggs, oil and vanilla.  Combine the dry ingredients; stir into banana mixture.  Fold in chocolate chips and nuts.  Pour into two greased 8"x4"x2" loaf pans.  Bake at 350 degrees for 55 minutes or til a toothpick inserted near the center comes out clean.  Cool for 10 mins before removing from pans to wire racks.  2 loaves.  **The batter works for muffins also**

Applesauce Bread

  • 1/2 cup butter/margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 1/4 cups applesauce
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 3/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
In a mixing bowl, cream butter and sugar.  Add the egg and applesauce; mix well.  Combine flour, baking soda, cinnamon, nutmeg, salt and cloves; gradually add to the creamed mixture just until combined.  Fold in raisins and nuts.  Pour into a greased 8"x4"x2" loaf pan.  Bake at 350 degr3es for 50-55 mins. or til toothpick inserted near center comes out clean.  Cool for 10 mins before removing from pan to a wire rack.

Honey-Raisin Quick Bread

  • 1 1/2 cups all purpose flour
  • 2/3 cup packed brown sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup bran cereal flakes
  • 1 cup milk
  • 1 egg, lightly beaten
  • 1/4 cup honey
  • 2 tbsp butter/margarine, melted
  • 1 cup raisins
In a bowl, combine the flour, brown sugar, baking powder and salt.  In another bowl, combine the cereal and milk; let stand for 5 mins.  Add the egg, honey and butter to cereal mixture; mix well.  Stir into dry ingredients just til moistened.  Fold in raisins.  Pour into a greased 8"x4"x2" loaf pan.  Bake at 350 degrees for 1 hr or til toothpick inserted near center comes out clean.  Cool for 10 mins before removing from pan to a wire rack.  **You should be able to make this recipe in your bread machine, loading ingredients liquid first, then remaining dry ones**

Granola Raisin Bread

1 2/3 cups water (70 to 80 degrees)
1/3 cup honey
2 tbsp butter or margarine
1 1/2 tsp salt
3 1/2 cups bread flour
1 cup quick cooking oats
1 tbsp active dry yeast
1 cup granola cereal
3/4 cup golden raisins

In bread machine pan, place the first seven ingredients in order suggested by manufacturer.  Select basic bread setting.  Choose crust color and loaf size if available.  Bake according to bread machine directions (check dough after 5 mins of mixing; add 1 to 2 tbsp of water or flour if needed).  Just before the final ikneading (your machine may audibly signal this), add the granola and raisins.  Yield - 1 2 lb. loaf
