Corn Pudding | Inez's Recipe Collection

She got this recipe from my Aunt Evelyn Aller.

Ingredients:

  • 2 cups corn
  • 4-8 strips of bacon (crumbled)
  • 3 tbsp of bacon grease
  • 2 tbsp chopped onion
  • 2 tbsp green pepper diced
  • 1 tbsp pimento
  • 4 level tbsps flour
  • 1.5 cups milk (or til runny)
  • 4 eggs
  • salt and pepper to taste.
Preparation:
  • Put corn in buttered casserole, add flour, salt and pepper.
  • Add green pepper and onion to bacon grease and saute (don't brown). Add to corn mixture along with bacon.
  • Beat eggs, add milk and then pour over corn mixture. Top with paprika if desired. Pour into 9" square pan.
Bake at 325 degrees for 30 minutes.

Corn Bread Casserole

 
  • 1 (15 1/2 oz) can whole kernel corn, drained
  • 1 (14 3/4 oz) can cream style corn
  • 1 (8 1/2 oz) pkg. corn bread/muffin mix
  • 2 tbsp butter or margarine, melted
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika (if desired)
  • 1 egg
In a large bowl, combine all ingredients.  Pour i nto a greased 11 x 7" baking dish.  Bake, uncovered at 400 degrees for 25-30 mins or til the top and edges are golden brown. 

4-6 servings.

Cheesy Potatoes

  • 2 lbs. hashbrowns (thawed)
  • 1/2 cup melted butter
  • 1 (16 oz) carton sour cream
  • 2-3 cups shredded cheese
  • 1/2 cup chopped onion
  • 1 can cream of chicken or celery soup
  • salt and pepper to taste
Combine all ingredients and bake at 350 degrees for approximately 1 hour.

*Add bacon pieces, ham or sausage to this dish to make into breakfast, lunch or dinner dish.

Corn Bread Casserole

1 can (15.25 oz) whole kernel corn, drained
1 can (14.75 oz) cream-style corn
1 pkg. (8.5 oz) cornbread/muffin mix
1 egg
2 tbsp butter/margarine, melted
1/4 tsp garlic powder
1/4 tsp paprika

-In a large bowl, combine all ingredients.  Pour into a greased 11"x7"x2" baking dish.  Bake, uncovered, at 400 degrees for 25-30 minutes or until the top and edges are golden brown.  4-6 svgs.
