Pizza Pasta Casserole


  • 2 lbs ground beef
  • 1 large onion, chopped
  • 2 jars (28 oz each) spaghetti sauce
  • 1 pkg (16 oz) spiral pasta, cooked & drained
  • 4 cups (16 oz) shredded mozzarella cheese
  • 8 oz sliced pepperoni
In a large skillet, cook beef and onion til meat is no longer pink; drain if necessary. stir in spaghetti sauce and pasta. Transfer to two greased 13"x 9"x 2" baking dishes. Sprinkle with cheese. Arrange pepperoni over the top.

Cover and freeze one casserole for up to 3 months. Bake the second casserole, uncovered, at 350 degrees for 25-30 minutes or til heated through.

To bake frozen casserole ~ Thaw in the refrigerator overnight. ake at 350 degrees for 35-40 minutes or til heated through.  8-10 servings each

MACARONI TUNA CASSEROLE

 
  • 1 pkg. (7 ¼ oz) macaroni & cheese
  • 1 can (10 ¾ oz) condensed cream of celery soup,
  • undiluted
  • 1 can (6 oz) tuna, drained and flaked
  • ½ cup milk
  • 1 cup (4 oz) shredded cheddar cheese
  • Minced fresh parsley, optional
Prepare macaroni and cheese according to package directions. Stir in soup, tuna and milk. Pour into a greased 2-qt. baking dish. Sprinkle with cheese and parsley if desired. Bake, uncovered, at 350 degrees for 20 min. or til cheese is melted. 4 svgs.

The kids will love and so will the adults.  Add a nice crisp salad and enjoy!

Beans and Ground Beef

  • 2 strips of bacon cut into small pieces (uncooked or cooked)
  • chopped onion to taste
  • 1 lb. ground beef
  • 1/2 cup molasses
  • 1/2 cup catsup
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1 tsp Worcestershire sauce (if desired)
  • 2 (15 oz) cans pork & beans
Saute bacon pieces in pan; add chopped onion and saute until clear.  Add ground beef and cook thoroughly.  Add remaining ingredients and cook til warmed through.  Pour into casserole dish and bake at 375 degrees for 1/2 hour. 

Serves 4-6.  Top with shredded cheese, maybe some crushed tortilla or potato chips.  Whatever sound good!

Bubble Pizza

  • 1 1/2 lb. ground beef
  • 1 can (15 oz) pizza sauce
  • 2 tubes (12 oz ea) refrigerated buttermilk biscuits
  • 1 1/2 cup (6 oz) shredded Mozzarella cheese
  • 1 cup (4 oz) shredded Cheddar cheese
In a skillet, brown the beef; drain.  Stir in pizza sauce.  Quarter the biscuits; place in a greased 13x9x2" baking dish.  Top with the beef mixture.

Bake, uncovered at 400 degrees for 20-25 mins.  Sprinkle with cheese.  Bake 5-10 minx longer or til cheese is melted.  Let stand for 5-10 mins before serving.

Makes 6-8 servings.

Kids Favorite Meatloaf

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 celery rib, chopped
  • 2 cups lightly crushed cornflakes
  • 10 oz pkg frozen peas & carrots, thawed
  • 1/4 cup parsley
  • 2 tbsp worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 eggs
  • 1/4 cup ketcup
Preheat oven to 350 degrees.  In large skillet, heat oil and cook onion and celery over medium low heat, stirring often, til softened about 5 mins.  In a large mixing bowl, use your hands to gently and thoroughly combine the meat, cornflakes, and all ingredients except ketcup.  In a loaf pan shape meat, spread top with ketcup. Bake til meat thermometer reads 155 degrees in the middle - about 1 hr.  Let stand 10 mins.

Franks and Corn Bread

  • 2 cans (16 oz each) pork and beans
  • 1 pkg (12 oz) hot dogs, halved lengthwise and sliced
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp prepared mustard
  • 1 pkg (8 1/2 oz) corn bread/muffin mix
  • 1 cup (4 oz) shredded cheddar cheese
In a bowl, combine the first five ingredients; mix well.  Transfer to a greased 9" square baking dish.  Prepare corn bread batter according to package directions; stir in cheese.  Drop by spoonfuls onto bean mixture.  Bake, uncovered, at 350 degrees for 40-45 mins or til heated through.  6 svgs.

Meaty Mac 'n' Cheese

1 pkg (7 1/4 oz) macaroni and cheese*
1 lb ground beef
1/4 cup chopped onion
1 1/2 cups salsa
1/2 cup fresh or frozen corn
1 can (2 1/4 oz) sliced ripe olives, drained
3 tbsp diced pimentos
Chopped tomato

Set aside cheese sauce mix from macaroni and cheese; cook macaroni according to package directions.  Meanwhile, in a large saucepan, cook beef and onion til meat is no longer pink; drain.  Add the salsa, corn, olives and pimentos; heat through.  Drain macaroni; add to beef mixture with contents of cheese sauce mix.  Mix well; heat through.  Garnish with cheese and tomatoes.  4-6 svgs.  *The milk and butter listed on the macaroni and cheese package are not used in this recipe*

Sloppy Joe Under a Bun

1 1/2 lbs. ground beef
1 can (15 1/2 oz) sloppy joe sauce
2 cups (8 oz) shredded cheddar cheese
2 cups biscuit/baking mix
2 eggs, beaten
1 cup milk
1 tbsp sesame seeds (optional)

In skillet, cook beef til no longer pink, drain.  Stir in sloppy joe sauce, mix well.  Transfer to a lightly greased 13"x9"x2" baking dish; sprinkle with cheese.  In a bowl, combine biscuit mix, eggs and milk just til blended.  Pour over cheese; sprinkle with sesame seeds.  Bake, uncovered, at 400 degrees for 25 mins or til golden brown.  8 svgs.

Chicken Salsa Pizza

1 prebaked italian bread shell crust
2 cups (8 oz) shredded cheddar cheese, divided
1 jar (11 oz) salsa
1 cup cubed cooked chicken

Place bread shell on an ungreased 12" pizza pan.  Sprinkle with 3/4 cup of cheese.  t
Top with salsa, chicken and remaining cheese.  Bake at 450 degrees for 8-10 minutes or til cheese is bubbly.  4 svgs.
