Layered Salad | Inez's Recipe Collection

Ingredients:

  • 1 head lettuce
  • 1/2 cup celery
  • 2 cups mayonnaise
  • 1 cup sour cream
  • 2 tsp sugar
  • Sliced Water Chestnuts
  • 8 slices bacon, cooked and crumbled.
  • You can also add peas, cauliflower or spinach.
Directions:

Mix 2 cups mayonnaise and 1 cup sour cream with 2 tsp sugar.  Arrange salad ingredients layered in a 2 qt oblong casserole dish.  Spread dressing over entire surface, sprinkle with parmesan cheese and cover tightly with saran wrap.  Refrigerate overnight.

South of the Border Chicken Salad



Ingredients
  •  2 boneless chicken breasts, cooked and diced
  • 2 ripe tomatoes, diced
  • 1 small red onion, diced
  • 1 large jicama, diced
  • 1 bunch fresh cilantro, chopped
  • 1 lime, juiced
  • 1 avocado - peeled, seeded and sliced
  • salt and pepper to taste 
Directions
1.In a large bowl, combine the chicken, tomatoes, red onion, jicama, cilantro and lime juice. Toss together well.

2.Garnish with slices of avocado, season with salt and pepper and serve immediately.
