Ingredients:
- 2 cups corn
- 4-8 strips of bacon (crumbled)
- 3 tbsp of bacon grease
- 2 tbsp chopped onion
- 2 tbsp green pepper diced
- 1 tbsp pimento
- 4 level tbsps flour
- 1.5 cups milk (or til runny)
- 4 eggs
- salt and pepper to taste.
Preparation:
- Put corn in buttered casserole, add flour, salt and pepper.
- Add green pepper and onion to bacon grease and saute (don't brown). Add to corn mixture along with bacon.
- Beat eggs, add milk and then pour over corn mixture. Top with paprika if desired. Pour into 9" square pan.
Bake at 325 degrees for 30 minutes.
