Date Nut Upside-Down Pudding Cake | My Birthday Cake of Choice

This is my favorite request when it comes time to pick out my birthday cake! Another year has gone by and on Dec. 28th I'll turn another year older ;-)  I hope you love it as much as I do.

Ingredients:

  • 1 cup (approx 20) pitted dates
  • 2 tbsp butter or margarine
  • 1 egg
  • 1.5 cups instant-type flour (that's how the recipe reads)
  • .5 cup granulated sugar
  • 2 cups brown sugar
  • 1 tsp baking soda
  • .5 tsp baking powder
  • .5 tsp salt
  • .5 cup broken walnuts.
Snip dates into 9" round or square baking dish; add 2 tbsp butter or margarine.  Pour 1 cup boiling water over, stir to melt butter and soften dates.  In a separate bowl, mix egg, flour, granulated sugar, brown sugar, baking soda and powder, and salt.  Beat with a fork until mixture is thoroughly blended, for about 2 minutes.  Scrape bottom and sides of bowl with a rubber spatula.  Fold in walnuts.

Smooth batter evenly in pan over dates; sprinkle with 1.5 cups remaining brown sugar.  Slowly pour 1.5 cups boiling water over all.  Bake at 375 about 40 minutes or til done.  The magic is under the cake!  Enjoy warm and served with ice cream if desired.  Makes 9 servings.
